Can you believe its June already????  Time flies when you’re having fun.  I don’t think anyone has disproved that theory yet!  This week I’ve really been focused on my return to fitness and all around wellness.  

1.  I had such a great time in a 5 day free boot camp conducted by a friend of mine Rachael Oosdyk (who happens to be a Beach Body Coach) a few weeks back, that I had to research and try this program they call the 21 Day Fix so I could continue what I started in Rachael’s Summer Slimdown Challenge.   Now keep in mind that I have done essentially zero activity for a year and I’d much rather spend 30 minutes catching up on an episode of the Blacklist or Hawaii Five-O then to feel my thighs burn (these workouts are kicking my bootie), but I have to say I LOVE how there are always tips on how to modify the exercises and customize the program.  This has been a really wonderful feature as I rehab my foot.  Not to mention the healthy eating habits, recipe bank and friendships I’m developing with the support of my accountability group one sweatie selfie at a time!  I’ll do a full review of the program once I complete it, but watch our Facebook page and Wellness Wednesday posts for musings along the way.  

2.  Since I’ve returned to working out on top of my physical therapy, I needed to take inventory of my workout clothing.  My current faves are these tank tops from Tek Gear that I picked up at Kohls and these LuLaRoe one size leggings I picked up from a recent party.  

They are not kidding when they say these are the next best thing to being naked.  These leggings are amazingly soft, stretchy and oh so bootilicious!  Unfortunately LulaRoe’s business model does not lend itself well to satisfying the urges of the instant gratification shopper.  Rather, you have to believe in Unicorns and hope one of the consultants you know and love will be delivered inventory that contains that special pair you have to have AND that doesn’t get swooped up in the time it takes you to type “sold 32”.  If you need a consultant, I’m sure my girls Lauren and Heather would be glad to hook you up.  Oh and that shirt is an Irma tunic.  Perfect with the leggings and also available from LulaRoe.  

3.  The flip side to the exercise is the healthy eating.  Rachel shared this chicken recipe for week one of the summer slimdown challenge that was surprisingly delicious.  

Melt in your Mouth Chicken Breast

4 Chicken Breasts

1/2 c Parmesan cheese

1 c Greek yogurt

1 tsp garlic powder

1/2 tsp pepper

Mix together the ingredients and pour over the chicken breasts in a 9×13 pan and bake at 375 for 45 minutes.  Simple and healthy!

Caramelized Shallot, Spinach and Goat Cheese Garlic Butter Pasta


1/2 pound pasta

2 tablespoons olive oil

2 shallots, sliced

1/4 teaspoon salt

12 ounces fresh spinach

3 tablespoons unsalted butter

2 garlic cloves, minced

6 ounces goat cheese, crumbled

Crushed red pepper flakes, pinch


Bring water to a boil for pasta and prepare according to directions.

While the pasta water is coming to a boil, heat a large skillet over low heat and add olive oil. Add the shallots and salt, stirring to coat. Cover and cook for 10 minutes, stirring occasionally. Add the spinach to the skillet with the shallots and toss. Stir continuously until the spinach is wilted, about 5 minutes.

Heat a small saucepan over medium heat and add the butter. Whisk constantly until the butter begins to brown. The minute you see brown bits appear in the bottom of the skillet, remove it from heat and whisk for another 15 seconds. Add the minced garlic to the brown butter and whisk for 30 seconds.

Add the cooked pasta to the skillet with the spinach and shallots. Toss well, then add the garlic brown butter and toss again. Crumble the goat cheese into the pasta and stir. Sprinkle with the crushed red pepper. Serve immediately.

4.  On the skincare and makeup front, I’m trying out a fair number of new products including most recently the Milani Conceal and Perfect Foundation and L’Oreal Visible Lift CC Eye Concealer.  First impressions are good, but I don’t think the concealer will take over the top spot.  I need a few more days before I can be sure.  It doesn’t crease, but I find I need more coverage than it provides.  The foundation on the other hand is really really good for a drugstore option if you’re looking for full coverage.  
I hope you all had a wonderful weekend.  We started working on the centerpieces for my in laws’ 50th wedding anniversary party.  I am loving the way the bottles are coming out thus far!  We removed the labels, embossed with puffy paint, spray painted them gold and then used modge podge to apply the gold glitter.  The plan is to cluster three of different heights on each table with white flowers.  Stay tuned!

We also wrapped up the baseball season and had dress rehearsal for next week’s big dance recital.  I don’t know about y’all, but I can’t wait for summer when activities slow down a bit.
